Leave it in dealer mode for a day or two. One can ride the bike in dealer mode, for as long as it takes to diagnose the fault / display a fault code. The fault code will only display for the duration that the ignition is felt on. The minute the ignition is turn off, the code is lost / reset, unless special equipment is used to retrieve the code. Normally the dealers have this apparatus. https://www.v-strom.co.uk/smf/index.php?topic=35921.0 and www.v-strom.co.uk/smf/index.php?topic=33121.0
Make sure that nothing shorts out, due to your dealer mode jumper touching the frame or other components. Report back if any code other than C00 is displayed.

@ Tony, you obviously know how to put it in dealer mode but  if you haven't got a list of the errors there's one in this post..................

Do you have it on a smart charger? Not unusual for low voltage across various components  to throw up codes. Likewise a build up of surface moisture, degradation of ABS components. Might be worth checking, or, if poss, a healthy road test to clean up brakes etc.

Exhaust control valve ..

If it's been stood for while it might be seized ..

It's attached to two cables that are connected to a servo motor, if the motor doesn't achieve its full movement cycle it'll throw up a fault.

For your info, if you don't get it fixed the plastic sprockets/cogs in the servo motor will eventually jump and strip rendering the servo useless.
If you want to use the bike disconnect the cables at the servo end, this will trick the ECU into thinking the servo is doing its job as it will comple it's movement cycle , your fault will then disappear.

Oh .. the exhaust valve, when free, sits in the open position so , if you free it the spring will hold it open

The valve maybe moving but not the amount required.
Yes, the bike will run fine apart from a little difference in the low rpm range.

Don't unplug the servo, just disconnect the cables at the servo end.

You could also try lubing the cables and giving the exhaust valve fettle , this may also help to cure the problem

Sometimes my Veek does this, usually after its sitting a few weeks but it clears once I ride it.
If you take the end can off you can see the valve, turn the bike on and off and you can see it working. I usually spray some wd40 on the pivots.
On the American stormtroopers site some high mileage owners have had the servo motor fail.  You can buy a servo motor eliminator off ebay but if just disconnecting the cables and leaving  the motor in works OK  then happy days, money saved.

27 and 28 on the diagram/list perhaps?
Looks like two different part codes so might need to find which cable you need to replace. If just ordering a cable then might be cheaper from a UK supplier but this site is great for finding part codes and I've ordered from them several times for larger stuff where the postage didn't make such a difference in percentage terms.
Good luck with it, sounds like you caught a fairly lesser evil at least.

The cables have identical part numbers so its a good chance they are the same part.😂
I would remove both cables and try to free them off before spending on ridiculously priced Suzuki parts.
EDIT:  Just noticed 1 cable is frayed so you will have to get a new one unless you can repair the old one.

Look different to me 😉

Price is the same and I've no idea how you decipher which is which though if I'm honest.
