has anyone fitted side wind deflectors to a vstrom DL1000 2015 model

I have... On both '14 and '18 models. Got them from eBay. They are for BMW GS1200R and they sale them clear or tinted. The installation is the same for both models but on your '15 you'll have to drill into those silver covers on the sides to install them (drilling required on '18 model too)

Yes, those are the ones. I slightly modifed them so there is no gap between them and the dash. If you need photos, I can take few. I remember there was a thread about them somewhere here or on the US forum.
